Peppermint Pattie Chocoloate Bark / Marble Chocolate Macadamia Nut Bark

Here are two varieties of chocolate bark for the price of one: Peppermint Pattie Chocolate Bark and Marble (white & milk chocolate) Chocolate Macadamia Nut Bark. While sitting at work today, I was day dreaming of all the possible types of chocolate bark I could make. I had a list of about at least 10 kinds… and boy was it hard to narrow down the choices. I considered pistachio cayenne, peanut butter & chocolate, rum raisin, caramel pecan, Oreo cookie, etc. By sheer luck (aka not being able to get my hands on many of the ingredients involved in these versions, along with running out of chocolate chips (a very sad moment in my kitchen), I was left with two options. And here they are! Chocolate bark is great because you can do whatever you please with it. They’re nice to pack up in a little box and give to friends (if you can manage to not eat it all yourself) and you can quickly make big batches at once. Plus, on a sweltering hot day like today, you have the option of using a microwave (as I did) to melt the chocolate, and don’t have to worry about heating up your kitchen even further with the stove. The only downfall here is that whenever I melt chocolate, I end up nearly chocolate-dipped myself. I just don’t know how it sneaks on to you. Directions for my two types of chocolate bark below!

Ingredients (Peppermint Pattie Bark):

  • 1 1/2 cups semi-sweet chocolate chips
  • 15 mini peppermint patties
  • 1/4 cup white chocolate chips
  • A few drops of green food colouring

Directions:

  1. Line pan with parchment paper.
  2. Chop 5 peppermint patties into small chunks.
  3. In a microwaveable bowl (or over the stove / using a double boiler) melt together the 1 1/2 cups semi-sweet chocolate chips with 10 peppermint patties.
  4. Pour mixture into pan and shake pan to smooth out chocolate.
  5. Evenly sprinkle cubed peppermint patties over top of the chocolate.
  6. In another microwaveable bowl (or in another pot), melt white chocolate chips. Mix in a few drops of green food colouring.
  7. Drizzle green white chocolate mixture over the chocolate bark.
  8. Place pan in fridge for about 10-20 minutes or until completely hardened.
  9. Break bark into pieces and store in a container in the fridge.

Ingredients (Marble Chocolate Macadamia Nut Bark):

  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • 3/4 cup macadamia nuts

Directions:

  1. Line pan with parchment paper.
  2. Chop 1/2 cup macadamia nuts coarsely, and 1/4 cup macadamia nuts finely.
  3. In one microwaveable bowl (or over stove), melt white chocolate chips. When completely melted, mix in coarsely chopped nuts.
  4. In another microwaveable bowl (or over stove), melt semi-sweet chocolate chips.
  5. Pour each variety of chocolate (white and semi-sweet) into the pan, alternating stripes. Using a spoon and making figure-eight motions, swirl together the white and brown chocolate to make a marble effect.
  6. Sprinkle finely chopped nuts over top.
  7. Put pan into fridge and let harden (about 10-20 minutes).
  8. When completely hard, break bark into pieces and store in a container in the fridge.
